If It’s Calm, Cook!

Our excess of wind has gone to less than five knots from several directions. That meant yesterday started with homemade corned beef hash. Not resting on laurels, Janet moved on to a scratch-made Granny Smith apple crumble. But that wasn’t where she left it. Dinner was baked panko-Meyer Lemon crusted Mahi-Mahi with green bean casserole and fresh baked bread hot from our oven

To hold my own and uphold tradition, I made Hoppin’ John for brunch this morning.

  1. When the spirit moves, I’d love to have the mahi-mahi recipe. The weather you’ve been having has recalled to me the Red sky at night, sailor’s delight, etc. saying. Hadn’t thought of it in years. Love, M

    • Two Mahi pieces 8 oz skin on one side. Patted dry.
      Juice of one Meyer Lemon squeezed over both sides and edges. Let sit for 10-15 minutes.
      Pat dry and rub all surfaces with mayonnaise.
      Dredge in panko.
      Season with Greek seasoning and oregano.
      Let sit 10-15 min
      Bake at 350 for 25+ minutes to ensure breading is crisp.
