Sweet Potato Souffle
6 medium sized sweet potatoes (or canned equivalent)
1/2 cup sugar
1 teaspoon vanilla extract
1/3 cup milk
1/3 cup Tbsp butter or margarine
2 Tbsp butter or margarine
1/3 cup brown sugar — firmly packed
1/3 cup pecans, finely chopped
2 Tbsp all purpose flour
[Adjustments for HVM Potluck — DOUBLED the topping and used only 4 large potatoes and added 2 Tbsp flour to potato mixture]
Preheat oven to 350 deg F. Cook sweet potatoes in boiling water 45 min to 1 hr or until tender. Let cool to touch, peel and mash. Add rest of potato mixture ingredients and beat until smooth. Spoon into 12’x8′ baking dish.
Combine topping ingredients and sprinkle over sweet potato mixture.
Bake for 30 minutes.
