One of the things about cruising with a chef aboard is the anticipation — of the meal and the meals that evolve from the left-overs. It starts at the market and lingers after the ultimate bite. Remember the scalloped potatoes?

Fritatta

Quarter and flip the quarters individually.

Well, the single side serving left over — chopped up, with the addition of 2 eggs, 3 heaped tablespoons of shredded cheese and chopped scallions evolved into a Torta, Fritatta, or Omelet depending on your inclination. The only thing that would have made this better would have been warmer weather.

With parsley — light, airy, toothsome and aromatic!

  1. LOVE frittata’s. We also LOVE leftovers. Whenever we have a grain for dinner, I make extra. If we don’t eat it all…..in extra helpings….then we heat it up for bfast and throw and egg on top or mix it in scramblers or such. Yumo!
