A Square Meal or A Meal Square

ZucchiniBake2Janet grabbed the mandolin again and began creating nearly transparent slices of squash. These were augmented (see below) and turned into one dish meal squares that seemed to have a place among stuffed pop-overs, quiche, savory cobbler-clafoutis, breakfast casserole and English puddings. Absolutely delicious for dinner, breakfast, brunch, lunch, tea, and we could imagine they would be good for watch standers. Experiment with the veggies. Meats should be low fat/moisture to keep the squares from becoming dense.

  • 2 cups zucchini, thinly sliced on mandolin
  • 1 cup squash, thinly sliced on mandolin
  • 3/4 cup Black Forest, ham diced (Janet add)
  • 1/2 cup chopped onion
  • 2 cloves minced garlic
  • 2 tbsp chopped parsley
  • 1/4 tsp sea salt
  • 4 eggs slightly beaten
  • 1-1/2 cups bisquit mix (she used a small “Jiffy” box)
  • 1/2 cup grated parmesan cheese
  • 1/2 tsp oregano or (she used fresh basil)
  • 1/2 cup olive oil (scant)
  • dash of ground pepper

Grease a 9×13 pan. Pre heat oven to 350° F. Mix all ingredients in a large bowl and pour in prepared pan. Bake 25 minutes or till golden brown. Cool slightly serve as squares. From The Cruising K.I.S.S. Cookbook, Corinne C. Kanter
